Bonfire Parkin
Ingredients:
8 oz oatmeal, 8 oz self-raising flour, 8 oz brown sugar, pinch of salt, 1.1/2 dspns ground ginger, 1 tsp bicarb,
8 oz margarine, 4.1/2 oz black treacle, 4.1/2 oz golden syrup, 1 egg.
Method:
Pre-heat oven to 160 deg C. Put all dry ingredients into a bowl, rub in the fat. Add all the other ingredients and mix well. Put into a lined roasting tin. Bake for 1 - 1.1/2 hours.
Once baked, it can be kept in a tin for several days to mature.
